Upgrading Android Software On Rooted / Flashed Evo

What is the proper technique to upgrade the software ? I know the official version just came out about a week ago, and i read today that the rooted version is now out. What do I need to do to update ? When I had a "rooted" Palm Pre, it was hacked to update from the server with the root as opposed to palm's server.. is the evo the same ?

Theres software called ROMs...it is basically everywhere mostly found on xda-developers.com. But it doesn't update from the server like how the palm pre does. If you update from the server it is possible you will lose your root and since the official verision just came out I don't think it has been rooted as of yet as from what I know.

i really want to switch to the MikG gingerbread rom.. but am so scared... what data will i lose ? im sure ill lose all the installed apps and possibly all user data.. will i just be using unrevoked to reflash the ROM ?

i heard MikG is much more stable... this jiminy cricket rom is messing up too much (Force close, random restarts, freezing) -- so if any of you could give me some insight as to what I need to do and what i should look out for, i would appreciate it

(i would just start diving into it myself but this is the only phone I have right now and dont want to brick it and be without anything)
